Sometimes, the best recipes are the ones with a story behind them. Today, as part of my Soup’s On! series, I’m delighted to share Miriam’s Soup, a reader-contributed recipe that’s as heartwarming as it is delicious.

This recipe, shared by CoraVee, is named after Miriam, an Amish friend who served it often. It’s a wonderfully simple and flavorful dish that blends hearty ingredients with the charm of homemade goodness.
Miriam’s Soup
About 1/2 lb summer sausage, sliced and cut into chunks
3 or 4 good-sized potatoes, cut into bite-sized chunks
1 onion, chopped
1 can green beans (with juice)
Salt and pepper to taste
Instructions:
In a large pot, combine the summer sausage, potatoes, onion, and a pinch of salt. Cover with water and cook until the potatoes are tender.
Add the can of green beans (including the juice) to the pot.
Sprinkle with pepper to taste and serve.
A note from CoraVee: “If Miriam had leftover spaghetti, she would add it, or if she wanted to extend it she cooked broken spaghetti with it. She sometimes used sausages they had cured themselves. I know this recipe sounds strange, but it is really delicious and so very easy to prepare.”
