There’s something special about a bowl of potato soup—it’s comforting, hearty, and perfect for a chilly day. Today, I’m excited to share a reader-contributed recipe for Creamy Potato Soup as part of my Soup’s On! series.
This soup is the ultimate comfort food, blending rich flavors with a creamy texture that feels like a warm hug in a bowl. Whether you enjoy it on its own or dress it up with your favorite toppings, it’s sure to be a hit around your table.
Potato soup
8-10 cubed potatoes
Bacon ends cubed small
2 garlic cloves pressed through garlic press
(You can put celery too if you want)
2 T. chicken bouillon
Salt and pepper
1 c. sour cream
Cheese if desired
Brown bacon, garlic, celery.
Add potatoes and barely cover with water.
Add chicken bouillon and salt and pepper to taste.
Cook until potatoes are soft.
Mash the potatoes when soft, and add sour cream and salt and pepper if desired.
Serve with grated cheese or without.
Note from Martha: We like it both ways. Today I put the potatoes in the crock pot and finished it when I came home.
